Eitan founded TableTransfers after fifteen years running independent restaurants in New York and Tel Aviv. He sold his last group — three concepts and a commissary — through a process that convinced him the hospitality industry deserved its own media-and-marketplace platform.

He writes Mise, the monthly framework column, and edits everything that goes out the door. His standing rule for the newsroom: every piece must be useful to an operator running service tonight.

Before TableTransfers he was an operating partner at a mid-market hospitality fund and a regular columnist on restaurant economics.
